Punjab on a platter at Kurry Accent
A food festival showcasing the rustic flavours of Punjabi cuisine is being hosted at Kurry Accent. The festival, aptly titled 'Virasat-e-India' features some iconic, as well as some forgotten delicacies, curated by one of India's most sought after home-chefs — Chef Sherry.
Speaking about the cuisine, Chef Sherry commented, "Punjab's culinary heritage reflects a countryside enriched by five rivers; Beas, Sutlej, Ravi, Jhelum and Chenab. Being the land of five rivers, it was named Punjab ('Punj' meaning five and 'ab' meaning waters). The legacy of Punjab dates back to at least 4,000 years and can be traced back to the Indus Valley civilisation. In the olden days, the culture of sanjha chulha in the villages of the Punjab was centred on a common tandoor, around which, women gathered to bake fresh bread and also, to exchange the stories of their lives. This festival aims to showcase the legacy of the cuisine, and how it has evolved over time."
As far as the style of preparation is concerned, the cuisine can be best described as simplistic with robust flavours. The use of tandoor adds a unique flavour to the dish which cannot be replicated by any other cooking method. The food is cooked in a rustic style on slow fire for a long time, especially for dishes like Meat Beliram and Maah Di Daal, which taste best when cooked overnight on low flame.

The Virasat-e-Punjab Food Festival lets guests choose from a la carté selections, as well as from a pre-curated Chef Tasting Menu. The elaborate spread features classics like Sarson Da Saag and Makki Di Roti, Pindi Chhole, along with iconic dishes like Butter Chicken and Maah Di Dal, and many of Chef Sherry's signature dishes. The festival will run till 31 January, 2020.
